Han-namagashi

han-namagashi

"Semi-fresh sweets": wagashi with roughly 10 to 30% moisture content, lasting days to a few weeks, the middle tier between namagashi and higashi.

Han-namagashi (半生菓子), “semi-fresh sweets,” sits between namagashi and higashi on wagashi’s moisture scale, generally defined as roughly 10 to 30% moisture content. Typical examples include dorayaki, monaka, and firmer styles of yokan. With a shelf life running from several days up to a few weeks depending on the specific piece, han-namagashi is the tier most often used for gift boxes, striking a balance between the delicacy of namagashi and the long shelf life of higashi. Shipping viability still depends heavily on the individual piece rather than the tier alone.
