A traditional single-piece steel forging technique considered the pinnacle of Japanese bladesmithing, requiring exceptional skill to forge and sharpen.
Honyaki (本焼, “true forging”) knives are forged from a single piece of high-carbon steel, unlike the more common kasumi construction that clads a hard steel edge onto a softer iron or steel body. Honyaki blades are notoriously difficult to forge, heat-treat, and sharpen without cracking, which is why they’re associated with the most experienced smiths and command premium prices. Sakai, one of Japan’s historic knife-making centers, is particularly known for honyaki work.
