Okaki

okaki

Larger, bite-sized Japanese rice crackers made from mochigome (glutinous rice), the bigger counterpart to arare.

Okaki (おかき) are glutinous-rice crackers made the same way as arare, from mochigome rather than the uruchimai used for senbei, which gives both a plumper, lighter texture than senbei’s flatter crunch. The practical distinction between okaki and arare is size rather than ingredients or method: arare generally covers pieces smaller than about 5cm, and okaki covers larger ones, though the boundary isn’t strictly defined and the two names are sometimes used loosely.
